Spiced Protein Loaf

 

INGREDIENTS:

 

Dry Ingredients:

  • 50g MISSFITS vanilla protein powder
  • 90g Almond flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 tablespoon mixed spice (5 spice)
  • ¼ teaspoon table salt
  • 150g coconut sugar
  • ¼ teaspoon nutmeg

Wet Ingredients:

  • 3 eggs
  • 50g coconut oil (melted)
  • ½ Cup cashew milk

 Toppings:

  • 1 pot Banoffee HOU
  • pumpkin seeds (optional)
  • almond flakes (optional)
  • dried raspberries (optional)

 

METHOD:

  1. Preheat the oven to 180 degrees C. Grease a loaf tin with coconut oil.

  2. In a large bowl, sift together the dry ingredients.

  3. In a separate bowl, mix the wet ingredients with a fork, then pour into the dry ingredients and mix together to form a running batter.

  4. Transfer the mixture evenly into the loaf tin, and bake for 15 minutes or until risen and firm to touch. Transfer to a wire rack to cool.

  5. Spoon a generous layer of HOU over the spiced protein loaf.
